- 2 ½ cups of watermelon (cut in cubes and deseed)
- 1 small cucumber (chopped and deseeded)
- 5 cherry tomatoes (cut in half)
- ½ of small red onion
- 2 tablespoons of red wine vinegar
- Half of small chili
- Balsamic glaze
Put watermelon in a blender and blend until smooth. Pour into bowl.
Put chopped cucumber, tomatoes, red onion, chili and red wine vinegar in a blender.
Blend until smooth.
Mix with watermelon well. Add salt. Put in refrigerator for couple hours until cold.
When serving drizzle over balsamic glaze.
If you want you can eat gazpacho with goats cheese.
