- 1 tablespoon of green jalapeno peppers (I used Santa Maria jalapenos)
- Handful of parsley
- Juice from 1 lime
- 2 ½ tablespoons of honey
- 1 large garlic clove
- 2 handfuls of rocket
- 1 large nectarine (sliced)
- ½ of papaya (sliced)
- 1 avocado (sliced)
- 2 handfuls of jumbo prawns
- 1 handful of dill
- 4 large garlic cloves
Put jalapeno peppers, parsley, lime juice, honey, garlic clove in a blender and blend until smooth. Put in refrigerator to cool down.
Meanwhile melt down the butter and add garlic.
When you feel garlic aroma add prawns.
Cook for couple minutes then add dill, cook until ready.
When ready put prawns on a table napkin to get rid off the butter.
Meanwhile take out the sauce and add half to rocket salads.
Mix everything together. Put rocket on a plate and arrange papaya, nectarine and avocado slices. Add prawns and drizzle over the rest of the sauce.
