- 1l apple juice
- 2 tablespoons of sugar
- 1 pealed orange
- 50g pealed and diced ginger
- 2 handfuls of raisins
- 1 handful of blanched almonds
- 2 cinnamon sticks
- 5 star anise
- 15 whole cloves
- 25 black pepper corns
- 1 bottle white wine
- 200ml light rum
Firstly blanch almonds (remove the skin) - pour water in a pan and bring it to boil.
Throw in the almonds and boil for couple minutes. Then peal off the skin. Then take a pot where you will prepare the drink.
Pour in sugar, orange peals, raisins, ginger, blanched almonds, cinnamon sticks, star anise, whole cloves, black pepper corns and apple juice. Bring it to boil and then just let it simmer for 10-15 minutes to bring out the flavour of spices.
Add white wine and simmer it for another 5 minutes, but don’t boil!
Finish the drink by adding the rum to the pot. Stir it few times and serve the drink hot.
