Cherry Gazpacho

Cherry Gazpacho


  • 5 cups pitted or frozen cherries
  • Juice from 1 ½ large oranges
  • Juice from 1 lemon
  • 2 cloves garlic (smashed)
  • 2 tablespoons shallot (minced)
  • 2 tablespoons fresh mint (chopped finely)
  • Fresh black pepper to taste


Puree the cherries, orange and lemon juices, garlic, shallot and mint in a blender until smooth.

Season with pepper to taste.
