- 2 ripe bananas
- 4 teaspoons of honey
- 1 teaspoon of cinnamon
- 2 toffee candies
- 1 chocolate candy
- 1 passion fruit
- 2 tablespoons of lemon zest
- Juice from 1 lemon
- Handful of cranberries
- Few raspberries
- Handful of blended dried cranberries
- Handful of almonds
- Ice cream to serve
Preheat the oven to 200 degrees.
Mix lemon zest, lemon juice, cinnamon and 3 teaspoons of honey.
Make a slit through the skin of bananas. Gently pull each banana peel open.
Pour over the sauce of honey and cinnamon. Put cranberries, raspberries, toffee and chocolate candies on bananas.
Put bananas in an ovenproof frying pan and cook for 20 minutes until bananas have turned black.
While bananas are cooking, caramelize almonds. Put 1 teaspoon of honey in a pan and add almonds. Stir until they are caramelized.
Drizzle over with passion fruit, almonds and dried cranberries.
Serve with a scoop of ice cream and any sauce that has escaped.
